So, yeah. Peanut Butter & Chocolate. Is there anything better? I don’t think so. I think salty/sweet desserts need their own category, respectfully. I’ve recently added, Peanut Butter & Chocolate Pie Cups to my menu under Mini Pies, and I don’t think you will be disappointed.
I had FUN taste testing these babies! Most PB&C pies call for a light, whipped topping consistency for the filling. I like those too, but I wanted to find a way to create that thick, rich and salty peanut butter filling, similar to a Reese’s Peanut Butter Cup (my absolute favorite candy). Because it is a refrigerated pie, it comes out very similar (a bit more creamy than that of the standard candy), but still firm, salty with just a tough of sweetness. Perfect!
For the crust, I went with a chocolate shortbread crust, just to give it that definite signature duel taste of sweet and salt. It’s not over-chocolaty, so I decided to also include chocolate whipped cream to top it with as well as chocolate jimmies. I think it gives it a nice (subtly sweet) garnish that looks almost too good to eat… almost.
