Pumpkin Pecan Mini Loaf

Pumpkin Fever is here, and we’re rolling out our favorite little “tea cake” or mini loaf, PUMPKIN PECAN.

 

My parent’s came to California a few weeks ago for my son’s birthday, and they brought us some shelled pecans from one of their eight enormous pecan trees. I wanted to put them to good use, so I decided to bake an old family favorite.

Straight out of my mom’s cookbook, Pumpkin Nut Bread was a staple in our house around the holidays. She would bake several loaves inside old, cylindrical, tin coffee cans and then would cut perfectly round slices to fan out and serve. 

So, I’ve decided to make it in mini form, following her recipe and sprinkling some chopped pecans on top just for a little added flair. As you might have guessed, I love pecans. You can order these with almost any nut you’d like including macadamia nuts, walnuts, roasted almonds or even WITHOUT nuts, if you’re not a nutty person. Just mention the new flavor when ordering using my form or contact.
